Ingredients

  • 1 lb. firm tofu
  • 1 celery stalk
  • 1 Tbsp. minced red onion
  • 2 Tbsp. grated carrot
  • 1/2 c. eggless mayonnaise
  • 2 Tbsp. tamari
  • 1 Tbsp. lemon juice
  • 1/2 tsp. kelp powder

Instructions

  1. Squeeze excess moisture out of the thawed tofu and crumble it.
  2. Mix the crumbled tofu with diced celery, minced red onion, and grated carrot.
  3. In a small bowl, stir together the eggless mayonnaise, tamari, lemon juice, and kelp powder.
  4. Add the dressing mixture to the tofu and vegetables and mix well.
  5. Serve immediately or chill before serving.
