- Preheat the oven to between 300° and 350° F.
- Combine 1/2 cup sugar, salt, and cake flour in a saucepan.
- Heat 4 cups of milk to almost boiling and slowly pour it over the dry mixture, stirring continuously.
- Cook the mixture slowly, stirring constantly, until it thickens.
- Beat the 4 egg yolks and add a small amount of the hot mixture to temper them.
- Mix the egg yolks into the hot mixture thoroughly.
- Add 4 tablespoons of butter and 1 teaspoon of vanilla, stirring until combined.
- Pour the mixture into a greased baking dish.
- Bake for 40 minutes until light brown on top, then remove from the oven and keep the temperature at 300°F.
- Spread a thin layer of apricot jam on top of the pudding.
- Beat the 4 egg whites with 2/5 cup sugar until stiff peaks form.
- Spread the meringue over the pudding.
- Return the dish to the oven and bake until the meringue is pale brown.
