Ingredients

  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 3/4 cup cake flour
  • 4 cups milk
  • 4 eggs
  • 4 tablespoons butter
  • 1 teaspoon vanilla
  • 2 tablespoons apricot jam

Instructions

  1. Preheat the oven to between 300° and 350° F.
  2. Combine 1/2 cup sugar, salt, and cake flour in a saucepan.
  3. Heat 4 cups of milk to almost boiling and slowly pour it over the dry mixture, stirring continuously.
  4. Cook the mixture slowly, stirring constantly, until it thickens.
  5. Beat the 4 egg yolks and add a small amount of the hot mixture to temper them.
  6. Mix the egg yolks into the hot mixture thoroughly.
  7. Add 4 tablespoons of butter and 1 teaspoon of vanilla, stirring until combined.
  8. Pour the mixture into a greased baking dish.
  9. Bake for 40 minutes until light brown on top, then remove from the oven and keep the temperature at 300°F.
  10. Spread a thin layer of apricot jam on top of the pudding.
  11. Beat the 4 egg whites with 2/5 cup sugar until stiff peaks form.
  12. Spread the meringue over the pudding.
  13. Return the dish to the oven and bake until the meringue is pale brown.
