Ingredients

  • 1 hard-boiled egg
  • 1 head Boston lettuce
  • 1/2 lb washed spinach
  • 1 sliced red onion
  • 2 Tbsp chopped parsley
  • 1/4 cup vinegar
  • 1/2 cup olive oil
  • dash garlic powder
  • 1/2 tsp paprika
  • 1/4 tsp dry mustard
  • 1 tsp salt
  • 1/4 tsp pepper

Instructions

  1. Remove the egg yolk and mash it with garlic powder.
  2. Blend in salt, paprika, pepper, and dry mustard.
  3. Add olive oil and vinegar; beat well until combined.
  4. Chop the egg white and parsley, then stir into the dressing.
  5. Combine Boston lettuce, washed spinach, and sliced red onion in a salad bowl.
  6. Pour the dressing over the salad.
  7. Toss lightly to combine and serve.
