Ingredients

  • 1 1/4 c. oil
  • 3 c. flour
  • pinch of salt
  • 4 eggs
  • 2 c. sugar
  • 2 tsp. baking soda
  • 2 tsp. baking powder
  • 2 tsp. cinnamon
  • 2 c. grated carrots or 2 c. grated zucchini or 2 c. mashed banana
  • 1/2 c. nuts (optional)
  • 1 c. raisins (optional)

Instructions

  1. Mix "wet" ingredients.
  2. Add in "dry" ingredients.
  3. Pour into greased and floured baking loaf pans.
  4. Bake at 350° for 15 minutes, then at 325° for 1 hour plus, until done.
  5. Test for doneness with knife.
  6. Freezes well when cool.
