Ingredients

  • 1 grouse
  • butter
  • salt and pepper
  • 1 can cream of celery soup
  • 1 can cream of mushroom soup
  • 1/2 cup whipping cream
  • 1 cup fresh mushrooms

Instructions

  1. Wash the grouse; cut legs and thighs off in one piece.
  2. Remove the back but keep the breast whole.
  3. Gently flour the grouse; season with salt and pepper.
  4. Saute the grouse in butter until lightly browned.
  5. Place the browned grouse in a casserole dish.
  6. Add the cream of celery soup, cream of mushroom soup, whipping cream, and fresh mushrooms to the casserole.
  7. Cover the casserole.
  8. Bake in a 350°F (180°C) oven for 1 and 1/2 hours.
