Ingredients

  • 3 cups flour
  • 2 cups sugar
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 4 eggs
  • 1 can (16 oz.) diced carrots, drained and mashed
  • 1 cup oil

Instructions

  1. Beat the batter at high speed for 3 minutes.
  2. Add 1/2 cup nuts and 1/2 cup raisins to the batter.
  3. Beat for another 1 minute.
  4. Bake in an ungreased angel food cake pan at 350°F for 1 hour.
