Instructions

  1. Place the roast, fat side up, on a rack in a shallow roasting pan. Sprinkle with salt and pepper.

  3. Insert a meat thermometer through the fat side into the center of the roast.
  4. Place in a slow oven at 325°F and roast about 25 minutes per pound for medium or until the internal temperature reaches 165°F; roast about 28 minutes per pound for medium or until 175°F; or until 180°F for well done.
  5. About 2 hours before the roast is done, remove from oven and take out the rack.
  6. Set the meat in the pan.
  7. Combine sliced mushrooms with their liquid and chopped onions; add to the drippings in the pan.
  8. Continue roasting, basting with the onion-mushroom sauce several times.
  9. Let the roast sit for about 20 minutes before slicing to make it easier to serve.
