Ingredients

  • 1 box yellow or white cake mix
  • 3 eggs
  • 16 oz. sour cream
  • 1 1/2 cups confectioners sugar

Instructions

  1. Bake the cake mix in 2 layers and split the layers or bake in 4 pans.
  2. Mix sour cream, confectioners sugar, and thawed coconut together.
  3. Save 1 cup of this mixture and chill.
  4. Spread the remaining mixture thickly between the cake layers.
  5. Mix the saved 1 cup of mixture with Cool Whip.
  6. Spread this mixture on top and sides of the cake using it all.
  7. The frosting will be thick.
  8. Store in an airtight container in the icebox. It will stay fresh for 3 months or can be frozen.
