- Bake the cake mix in 2 layers and split the layers or bake in 4 pans.
- Mix sour cream, confectioners sugar, and thawed coconut together.
- Save 1 cup of this mixture and chill.
- Spread the remaining mixture thickly between the cake layers.
- Mix the saved 1 cup of mixture with Cool Whip.
- Spread this mixture on top and sides of the cake using it all.
- The frosting will be thick.
- Store in an airtight container in the icebox. It will stay fresh for 3 months or can be frozen.
