Ingredients

  • 5 lb. coarse chuck
  • 8 oz. raw tallow
  • 2 garlic cloves
  • 1 small onion
  • 1/2 to 2 teaspoons cumin seed
  • 4 cups water
  • 3 oz chili blend
  • 2 teaspoons paprika
  • 2 tablespoons sugar

Instructions

  1. Put the chuck, raw tallow, garlic cloves, onion, cumin seed, and water in a pot and cook for 30 minutes.
  2. Add chili blend and paprika, then cook until the meat is done.
  3. Season with salt to taste and add sugar.
  4. If the chili is too thin, add 2 tablespoons of flour to thicken.
