Walnut Honey Cake

Ingredients

  • Syrup
  • 1 cup sugar
  • 1/2 cup honey
  • 1 cup water
  • 1 teaspoon lemon juice
  • 1 cinnamon stick
  • Cake
  • 3/4 cup unsalted butter (room temp)
  • 1/2 teaspoon orange zest
  • 3/4 sugar
  • 3 eggs
  • 1 cup flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions

  1. For syrup, bring all ingredients to a boil in saucepan.
  2. Simmer 20 minutes.
  3. Set aside to cool.
  4. For cake, cream butter, orange peel, and sugar together until fluffy.
  5. Beat in eggs, one at a time, beating well after each addition.
  6. Mix flour, baking powder, cinnamon, and salt.
  7. Fold flour mixture into butter mixture, alternating with milk.
  8. Stir in nuts.
  9. Pour batter into a greased and floured 8-inch square pan.
  10. Bake at 350 degrees for 30 minutes, or until done.
  11. Remove cake from oven, cool, and cut into diamonds while in the pan.
  12. Pour syrup over cake.
  13. Cool.
  14. Refrigerate and let soak 24 hours before serving.
