Ingredients

  • 10 lb. prepared watermelon rind
  • 10 lb. sugar
  • 1 qt. white vinegar
  • 3/4 tsp. oil of cloves
  • 3/4 tsp. oil of cinnamon

Instructions

  1. Cover watermelon rind with cold water and set in refrigerator overnight.
  2. Drain and rinse the watermelon rind.
  3. Put the watermelon rind in boiling water and cook until clear, about 10 minutes.
  4. Drain the cooked watermelon rind.
  5. Combine sugar, white vinegar, oil of cloves, and oil of cinnamon in a large pot.
  6. Add the cooked watermelon rind to the syrup and simmer until well coated and slightly thickened.
  7. Pack the preserve into sterilized jars and seal.
