Wedding Rice is a fragrant, sweet and savory dish featuring vermicelli, almonds, dates, and coconut, perfect for celebrations or special occasions, offering rich textures and flavors.

Ingredients

  • 1/4 cup butter or margarine
  • 25 strands vermicelli pasta
  • 2 cups chicken broth
  • 1 cup long grain white rice
  • 1/2 cup slivered and blanched almonds toasted
  • 1/2 cup chopped dates
  • 1/4 cup flaked coconut

Instructions

  1. Melt butter in a medium saucepan.
  2. Crunch up vermicelli pasta into approximately 1-inch lengths.
  3. Saute pasta in butter until golden brown.
  4. Add chicken broth to the butter and vermicelli.
  5. Bring to a boil.
  6. Add rice and cover; simmer for 10 minutes.
  7. Add toasted almonds, chopped dates, and coconut to the rice.
  8. Continue to simmer for 10 more minutes.
  9. Remove rice from stove.
  10. Let stand, covered, for 5 minutes.
  11. Fluff with a fork and serve immediately.
