  • 3 medium cucumbers

  6. Add the remaining cucumber mixture to the bowl. Season with vinegar, salt, and pepper.
  7. Chill the gazpacho for 6 to 8 hours.
  8. Serve in large chilled bowls, garnished with chopped tomatoes, green onions, parsley, cilantro (optional), and toasted almonds in smaller bowls.
