Welsh Fruit Cake

Ingredients

  • 1 3/4 cups Flour
  • 1 tsp. Baking Powder
  • 3/4 cup Butter
  • 1 cup Sugar (1/4" from top)
  • 3/4 cup Raisins
  • 3/4 cup Sultanas
  • 3/4 cup Currants
  • 3/4 cup Mixed Fruit or Peel
  • 3 Eggs
  • 1/4 tsp. Nutmeg
  • 1/4 tsp. Cinnamon
  • Pinch of Salt

Instructions

  1. Sift the flour, salt, baking powder and spices together.
  2. Cream together butter and sugar beating until light and fluffy.
  3. Beat the eggs and add one at a time to the butter/sugar mixture.
  4. Fold in the flour and then the fruit.
  5. Turn into a lined, greased 7" or 8" cake tin.
  6. Sprinkle the top with sugar.
  7. Bake in the center of a 350 degree oven for approximately 1 1/2 hours.
