Welsh Griddle Scones

Ingredients

  • 2 c. self-rising flour
  • 1 c. margarine
  • pinch of cinnamon
  • 3 oz. currants
  • egg and milk to mix
  • pinch of salt
  • pinch of mixed spices
  • 3 oz. brown sugar
  • 1 oz. chopped peel

Instructions

  1. Rub fat into flour.
  2. Add other ingredients and mix with milk or egg and milk to a pastry consistency.
  3. Roll out and cut into rounds.
  4. Heat griddle for 5 minutes.
  5. Cook both sides at reduced heat.
  6. Serve hot dusted with caster sugar or cold spread with butter.
