Ingredients

  • 6 medium potatoes, peeled and sliced
  • 4-6 cups stewed or fresh tomatoes
  • 2-3 medium onions, sliced
  • 1 stick oleo or butter
  • about 1/3 cup flour
  • about 1/3 cup sugar
  • salt and pepper to taste

Instructions

  1. Mix flour and sugar together in a bowl.
  2. Place about 1 cup of tomatoes into the bottom of a casserole dish.
  3. Add a layer of sliced potatoes, followed by sliced onions.
  4. Top with more tomatoes.
  5. Sprinkle the flour and sugar mixture over the layers, then season with salt and pepper.
  6. Dot the top with butter or oleo.
  7. Continue layering until all ingredients are used, finishing with a layer of tomatoes and dots of butter on top.
  8. Bake in a 350°F oven for about 45 minutes until the potatoes are tender.
