Ingredients

  • 1 lb pork tenderloin
  • 1 Tbsp Crisco shortening or oil, divided
  • 2 medium bananas
  • 1/4 cup brown sugar
  • 1/4 cup brandy or rum

Instructions

  1. Slice the pork tenderloin into 1-inch pieces and flatten slightly with the heel of your hand.
  2. Heat 1 teaspoon of Crisco shortening or oil in a large skillet over medium heat.
  3. Add the pork pieces and brown quickly on both sides, about 4 to 5 minutes.
  4. Remove the meat from the skillet and keep warm.
  5. Add the remaining 2 teaspoons of Crisco shortening or oil to the skillet.
  6. Add the sliced bananas and sauté for 2 to 3 minutes.
  7. Stir in the brown sugar and pour in the brandy or rum.
  8. Cook and stir until the sauce becomes thick and bubbly.
  9. Return the browned pork to the skillet and heat through before serving.
