Western Gingerbread

A warm and spicy gingerbread with a tender crumb and a buttery topping, perfect for holiday gatherings or cozy afternoons with a cup of tea.

Ingredients

  • 2 c. flour
  • 1 1/4 c. sugar
  • 1 tsp. cinnamon
  • 1 1/2 tsp. ginger
  • 1/4 tsp. salt
  • 1 tsp. soda
  • 1/2 c. shortening
  • 1 egg
  • 2 Tbsp. sorghum
  • 1 c. buttermilk

Instructions

  1. Cut the shortening into the dry ingredients and reserve 1/2 cup of the crumb mixture.
  2. Add the egg, sorghum, buttermilk, and soda to the mixture and beat well.
  3. Pour the batter into a prepared 13 x 9 x 2-inch pan.
  4. Cut 1 tablespoon of butter into the reserved crumb mixture and sprinkle over the top of the batter.
  5. Bake at 350°F for 40 minutes.
