Ingredients

  • 2 cups Imperial sugar
  • 1 teaspoon soda
  • 1 cup buttermilk
  • 1/8 teaspoon salt
  • 2 tablespoons butter
  • 2 1/2 cups pecan halves

Instructions

  1. In a large (3 1/2 quart) heavy saucepan, combine sugar, soda, buttermilk, and salt.
  2. Cook over high heat for about 5 minutes or until the mixture reaches 210°F on a candy thermometer.
  3. Stir often and scrape the bottom of the pan; the mixture will foam up.
  4. Add butter and pecan halves.
  5. Continue cooking over medium heat, stirring constantly and scraping the bottom and sides of the pan, until the candy reaches the soft ball stage (234°F).
  6. Remove from heat and let cool slightly for about 2 minutes.
  7. Beat with a spoon until the mixture becomes thick and creamy.
  8. Drop spoonfuls onto waxed paper or foil and let cool completely.
