- In a large skillet, heat oil. Saute diced onion, green pepper & sliced potatoes over medium heat till tender but firm. Tear deli ham into small pieces & stir into skillet mixture. In a bowl, beat eggs, salt, pepper & red pepper flakes. Add to skillet mix & lower heat slightly. Gently fold mixture as eggs cook. Do not overcook eggs. Serve with toast or English Muffins & jelly.
