Ingredients

  • 1 1/2 lb. red snapper fillets
  • 1 tsp. dried oregano leaves
  • 2 tsp. chili powder
  • 1/4 tsp. cayenne
  • 2 Tbsp. flour
  • 1/4 cup cornmeal
  • 1/2 tsp. salt
  • 2 Tbsp. butter or margarine
  • 3 Tbsp. lemon juice
  • lemon slices for garnish

Instructions

  1. Cut the fish into serving size pieces.
  2. In a plate, combine dried oregano, chili powder, cayenne, flour, cornmeal, and salt.
  3. In another plate, mix melted butter and lemon juice.
  4. Dip fish pieces into the butter mixture, then press into the cornmeal mixture.
  5. Place the coated fish on a lightly buttered shallow dish.
  6. Pour any remaining butter mixture over the fillets.
  7. Bake at 450°F (232°C) for 10 to 12 minutes until the fish flakes when pressed with a finger.
