Wheat Germ Corn Bread

Ingredients

  • 2 c. yellow corn meal
  • 1 3/4 c. all-purpose flour
  • 1 1/4 c. toasted wheat germ
  • 1/2 c. sugar
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 2 c. buttermilk
  • 1/2 c. oil
  • 2 eggs, slightly beaten

Instructions

  1. About 2 hours before serving or early in the day:
  2. Preheat oven to 375°.
  3. Grease well a 9 x 5-inch loaf pan.
  4. In a large bowl, with a fork, beat buttermilk, oil and eggs.
  5. In another bowl, combine dry ingredients.
  6. Stir egg mixture into flour mixture, just until flour is moistened.
  7. (Batter will be lumpy, not smooth.)
  8. Quickly pour into loaf pan, spreading evenly.
  9. Bake 1 hour and 10 minutes or until toothpick inserted in center comes out clean.
  10. Cool bread in pan on wire rack 10 minutes.
  11. Remove from pan.
  12. Serve warm or cool bread completely on wire rack to serve later.
  13. Makes 1 loaf.
