Ingredients

  • 2 c. sugar
  • 1/2 c. sour cream
  • 1/3 c. light corn syrup
  • 2 tbsp. butter or margarine
  • 1 1/2 c. whole natural almonds, chopped, divided
  • 1/4 tsp. almond extract

Instructions

  1. Butter an 8-inch square baking pan.
  2. Combine sugar, sour cream, and light corn syrup in a saucepan.
  3. Cook over medium heat, stirring constantly until the mixture comes to a boil.
  4. Reduce heat and simmer for about 5 minutes, continuing to stir.
  5. Remove from heat and stir in butter, chopped almonds (reserve some for topping), and almond extract.
  6. Pour the mixture into the prepared baking pan and spread evenly.
  7. Sprinkle remaining chopped almonds on top if desired.
  8. Let cool at room temperature until set, then cut into squares.
