Ingredients

  • 1 lb navy beans
  • 3 ham hocks
  • 1 cup onions
  • 1 cup celery
  • 2 cups carrots
  • 2 cups potatoes
  • salt and pepper
  • thyme

Instructions

  1. Clean and soak the navy beans overnight.
  2. Drain the soaked beans and cover them with water in a large pot.
  3. Add diced carrots, potatoes, onions, and celery to the pot.
  4. Add the ham hocks to the pot.
  5. Bring to a boil, then reduce heat and cook for 2 hours.
  6. Add thyme, salt, and pepper to taste.
  7. Serve hot.
