Ingredients

  • 1 whole lemon
  • 4 eggs
  • 1 cup sugar
  • 1/3 cup butter or margarine

Instructions

  1. With a sharp knife, cut the yellow part of the lemon peel away.
  2. Put the peeled lemon into a blender container.
  3. Remove and discard the white pith, then coarsely chop the lemon meat.
  4. Discard any seeds.
  5. Add eggs, sugar, and butter to the blender with the lemon.
  6. Whirl until smoothly blended.
  7. Pour the lemon mixture evenly into four 6-ounce custard cups or other ovenproof dishes.
  8. Set the cups into an 8-inch square pan and pour hot water into the pan around the cups until it reaches about 1/2 inch high.
  9. Bake at 350°F for 25 to 30 minutes until the centers are no longer liquid when shaken.
  10. Lift the custards from the water bath and let cool for at least 15 minutes.
  11. Refrigerate to chill for 2 to 8 hours.
  12. Garnish with sliced strawberries before serving.
