Ingredients

  • 1 medium lemon
  • 1 1/2 cups sugar
  • 4 eggs
  • 1/3 cup margarine, melted

Instructions

  1. Wash the lemon, then slice and cube it, removing seeds but keeping the rind.
  2. Place the lemon, sugar, eggs, and melted margarine into a blender.
  3. Process well at high speed until smooth.
  4. Pour the mixture into an unbaked 9-inch pie shell.
  5. Place the pie on a cookie sheet and bake for 40 minutes at 325°F.
