A luscious blackberry cobbler with a tender batter and sweet, juicy blackberries, perfect for summer gatherings or cozy desserts with a dollop of cream.

Ingredients

  • 1 qt. ripe blackberries
  • 2 1/2 c. sugar
  • 1/2 c. butter
  • 2 c. sifted self-rising flour
  • 2 c. milk
  • 2 large eggs
  • 1/2 pt. heavy cream

Instructions

  1. Heat blackberries with 1/2 cup sugar and butter in a large saucepan just until sugar dissolves and butter melts.
  2. Mix remaining sugar with sifted self-rising flour.
  3. Stir in the milk and beaten eggs and combine the rest of the ingredients, mixing well.
  4. Pour this batter into a buttered 13 x 9-inch baking dish.
  5. Spoon the blackberry mixture on top.
  6. Bake at 350°F for 40 to 45 minutes.
  7. Cool before serving. Serve with a trickle of heavy cream on top.
