Ingredients

  • 2/3 cup vegetable oil
  • 2/3 cup flour
  • 1 pound smoked sausage, sliced
  • 2 cups onion, chopped
  • 1 cup green bell pepper, chopped
  • 2 tablespoons parsley, chopped
  • 1 tablespoon minced garlic
  • 2 wild ducks, cleaned and cut into serving pieces
  • 2 stalks celery, chopped
  • 2 quarts water
  • 3-1/2 teaspoons salt
  • 1-1/2 teaspoons black pepper
  • 1/4 teaspoon red pepper
  • 1 teaspoon thyme
  • 2 bay leaves
  • 3 tablespoons fil powder
  • 2 tablespoons Worcestershire sauce
  • 1 pound stewed tomatoes

Instructions

  1. Boil the wild ducks until tender.
  2. Remove the meat from the bones and set aside.
  3. In a large pot, heat vegetable oil and brown the duck pieces.
  4. Remove the duck from the pot and set aside.
  5. In the same pot, add chopped onions, green bell peppers, and celery; cook until tender.
  6. Stir in minced garlic and cook for another minute.
  7. Add flour to the vegetables and cook, stirring constantly, until browned to make a roux.
  8. Gradually stir in water, then add salt, black pepper, red pepper, thyme, bay leaves, and fil powder.
  9. Bring to a boil, then reduce heat and simmer for about 1 hour.
  10. Add smoked sausage, stewed tomatoes, Worcestershire sauce, and the cooked duck meat.
  11. Simmer for another 30 minutes to develop flavors.
  12. Remove bay leaves and serve hot.
