Ingredients

  • 1/2 lb. dates, halved
  • 1/2 lb. pecans, coarsely chopped
  • 3/4 cup flour
  • 1/2 teaspoon baking powder
  • 2 eggs
  • 3/4 cup sugar
  • pinch of salt
  • 1/2 teaspoon vanilla

Instructions

  1. Set oven at 300°F (150°C).
  2. Beat eggs and sugar together until creamy.
  3. Add flour, salt, and baking powder to the egg mixture and mix well.
  4. Stir in dates, chopped pecans, and vanilla by hand until evenly combined.
  5. Spoon the batter into a greased 9 1/2 x 4 1/2 x 2 1/4-inch loaf pan.
  6. Cover the pan with foil and bake on the middle shelf for 1 1/2 hours.
  7. Increase oven temperature to 325°F (160°C), remove foil, and bake for an additional 15 to 20 minutes, until a toothpick inserted into the center comes out clean.
  8. Remove from oven, turn out onto a wire rack, and cool completely before slicing.
