Windsor Salad
A light, fruity salad with pineapple, cherries, and creamy cheese, perfect for summer gatherings or as a sweet side dish for brunch or dessert.

Instructions
- Put sugar, crushed pineapple, and lemon juice in a saucepan.
- Heat to boiling point.
- Add dissolved gelatine to the mixture and let it cool.
- Mix cream cheese with some cherry juice and blend until smooth.
- Add chopped maraschino cherries to the cream cheese mixture.
- When the gelatine mixture is cool, add the cheese and cherry mixture, then fold in whipped cream.
- Refrigerate for at least 30 minutes before serving.
