A light, fruity salad with pineapple, cherries, and creamy cheese, perfect for summer gatherings or as a sweet side dish for brunch or dessert.

Ingredients

  • 1 small can crushed pineapple
  • 1 envelope Knox gelatine
  • 1/2 cup cold water
  • Juice of 1/2 lemon
  • 1/4 cup sugar
  • 2 (3 oz.) or 1 (8 oz.) package cream cheese
  • 1 small bottle maraschino cherries

Instructions

  1. Put sugar, crushed pineapple, and lemon juice in a saucepan.
  2. Heat to boiling point.
  3. Add dissolved gelatine to the mixture and let it cool.
  4. Mix cream cheese with some cherry juice and blend until smooth.
  5. Add chopped maraschino cherries to the cream cheese mixture.
  6. When the gelatine mixture is cool, add the cheese and cherry mixture, then fold in whipped cream.
  7. Refrigerate for at least 30 minutes before serving.
