Ingredients

  • 1 stick butter
  • 1 1/2 cups white sugar
  • 2 eggs, separated
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1 cup milk
  • 1 teaspoon vanilla
  • 1 1/2 cups brown sugar
  • 5 slices pineapple
  • 5 cherries

Instructions

  1. Cream 1/2 stick of butter with white sugar to make the batter.
  2. Mix in the egg yolks well.
  3. Sift together flour and baking powder.
  4. Add alternately with milk to the batter.
  5. Add vanilla extract to the batter.
  6. Beat egg whites until stiff and fold into the batter.
  7. In a cast-iron skillet, place 1/2 stick of butter in small dabs.
  8. Add brown sugar and pour evenly over the butter in the skillet.
  9. Place 1 slice of pineapple in the center of the pan and arrange the remaining slices around it, centering each with a cherry.
  10. Pour the batter over the pineapple and cherries.
  11. Bake in a slow oven at 300°F (150°C) for about 1 hour or until done.
