Pineapple Turnover

- Cream 1/2 stick of butter with white sugar to make the batter.
- Mix in the egg yolks well.
- Sift together flour and baking powder.
- Add alternately with milk to the batter.
- Add vanilla extract to the batter.
- Beat egg whites until stiff and fold into the batter.
- In a cast-iron skillet, place 1/2 stick of butter in small dabs.
- Add brown sugar and pour evenly over the butter in the skillet.
- Place 1 slice of pineapple in the center of the pan and arrange the remaining slices around it, centering each with a cherry.
- Pour the batter over the pineapple and cherries.
- Bake in a slow oven at 300°F (150°C) for about 1 hour or until done.
