Ingredients

  • 2 tablespoons olive oil
  • 3 cloves garlic
  • 1 lb mushrooms
  • 1 medium zucchini
  • 1 medium onion
  • salt
  • pepper
  • 1 can chick peas
  • 1 1/2 teaspoons cumin
  • 1 can diced tomatoes

Instructions

  1. In a medium sauce pot over moderate heat, sauté garlic and mushrooms in olive oil for 2-3 minutes.
  2. Add in zucchini and chopped onion.
  3. Season with salt and pepper.
  4. Sauté for another 5 minutes.
  5. Add chickpeas, cumin, diced tomatoes, and chopped rosemary.
  6. Bring the mixture to a bubble, then reduce heat to low and simmer for 10 minutes.
