Ingredients

  • 1 cucumber
  • 1/2 medium red onion
  • 1/2 cup oil
  • 1/4 cup vinegar
  • 1-1/2 tablespoons sugar
  • 1/4 teaspoon salt
  • dash of pepper

Instructions

  1. Pull tines of a fork firmly down the length of the cucumber to create textured lines.
  2. Thinly slice the red onion, separating the rings.
  3. Combine oil, vinegar, sugar, salt, and pepper in a bowl to make the dressing.
  4. Pour the dressing over the sliced cucumber and onions.
  5. Marinate for 1 hour to allow flavors to meld.
  6. Drain the vegetables before serving.
