Ingredients

  • 3 medium yams, cooked or 17 oz. can, drained
  • 2 c. seedless grapes
  • 1 Tbsp. honey
  • 1 Tbsp. lemon juice
  • 2 firm bananas, sliced
  • 2 red apples, diced
  • 1 c. mayonnaise or salad dressing

Instructions

  1. Peel yams and cube.
  2. Toss grapes, sliced bananas, and diced apples together lightly.
  3. Add cubed yams to the fruit mixture.
  4. Combine mayonnaise, honey, and lemon juice to prepare the dressing.
  5. Mix the dressing into the fruit and yam mixture thoroughly.
  6. Serve on crisp cabbage leaves or lettuce with additional dressing if desired.
