Ingredients

  • 3/4 cup yellow cornmeal
  • 3/4 cup flour
  • 1/2 cup sugar
  • 1/2 tablespoon baking powder
  • 3/4 cup milk
  • 1/4 cup vegetable oil
  • 1 tablespoon molasses
  • 1 egg

Instructions

  1. Preheat oven to 350°F.
  2. Spray a baking pan with vegetable spray.
  3. Slightly beat the egg and add milk, molasses, and vegetable oil; blend well.
  4. Mix together the cornmeal, flour, sugar, and baking powder in a bowl.
  5. Add the wet ingredients to the dry ingredients and mix only to blend.
  6. Scrape the batter into the prepared baking pan.
  7. Bake for 20 to 25 minutes, or until the cornbread separates from the sides of the pan and the center returns to the touch.
