Instructions

  1. Place chicken in a 9 x 13 x 2-inch baking dish.
  2. Season chicken with garlic, chilies, ginger, and salt.
  3. Pour lemon juice over the chicken and let marinate for 2 to 3 hours.
  4. Heat oil in a large frypan.
  5. Pour off marinade and reserve.
  6. Pat chicken pieces dry.
  7. Brown chicken in oil and transfer to a plate.
  8. Pour off oil, leaving 2 tablespoons in the frypan.
  9. Return chicken to the frypan and add the reserved marinade; bring to a fast boil.
  10. Reduce heat and let simmer until chicken is tender, about 30 minutes.
  11. Ten minutes before chicken is done, add sliced onions and cook until slightly crisp.
  12. Serve hot with rice.
