Ingredients

  • 2/3 cup butter, softened
  • 1 3/4 cups sugar
  • 2 eggs
  • 2 1/2 teaspoons baking powder
  • 1 1/2 teaspoons vanilla
  • 3 cups cake flour
  • 1 1/4 cups milk
  • Lemon Filling

Instructions

  1. Cream the butter until smooth, then gradually add sugar, creaming until light and fluffy.
  2. Add eggs one at a time, then stir in vanilla, beating until fluffy.
  3. Sift together cake flour, baking powder, and 1 teaspoon salt.
  4. Alternately add the flour mixture and milk to the creamed mixture, starting and ending with the flour, beating after each addition.
  5. Beat the mixture for 1 minute after all ingredients are incorporated.
  6. Pour batter into two greased and lightly floured 9-inch round layer pans.
  7. Bake in a 350°F (175°C) oven for 30 to 35 minutes until a toothpick inserted in the center comes out clean.
  8. Cool the cakes in the pans for 10 minutes, then remove from pans and cool completely.
  9. Fill the cake layers with Lemon Filling and frost with Seven Minute Frosting.
