Ingredients

  • 7 medium yellow squash, diced
  • 1 large onion, chopped
  • 1 bell pepper, chopped
  • 2 Tbsp. butter
  • 1 egg, beaten
  • 1/4 cup butter, melted
  • dash of salt and pepper
  • 2 cups corn

Instructions

  1. Cook the diced yellow squash until tender, then drain.
  2. Brown the chopped onion and green pepper in 2 tablespoons of butter.
  3. Combine the cooked onion, green pepper, squash, and corn in a mixing bowl.
  4. Add the beaten egg, melted butter, salt, and pepper to the mixture and stir well.
  5. Pour the mixture into a buttered baking dish.
  6. Sprinkle the top with buttered cracker crumbs.
  7. Bake at 350°F for one hour or until the casserole is firm.
