Yogurt riata is a cooling Indian side dish with fresh cucumber, tomato, and herbs, perfect for pairing with rice, dal, or grilled meats, or enjoyed with bread.

Ingredients

  • 8 oz. plain yogurt
  • 1/2 cucumber, peeled and chopped
  • 1/4 onion, chopped finely
  • 2 tsp. coriander, chopped
  • 1/2 tomato, chopped
  • salt, to taste

Instructions

  1. Blend yogurt, cucumber, onion, coriander, tomato, and salt until completely coated.
  2. Chill for several hours.
  3. Serve with rice, dal, meat, and chicken.
  4. Can also be eaten alone with bread.
