Ingredients

  • 3 cups potato water
  • 1 2/3 cups sugar
  • 1 teaspoon salt
  • 3/4 cup margarine
  • 1 cup nonfat dry milk
  • 2 eggs
  • 2 packages dry yeast
  • 1/2 cup lukewarm water
  • 2 teaspoons sugar
  • 12 cups white flour
  • 4 tablespoons ground cardamom

Instructions

  1. Put sugar, salt, margarine, and nonfat dry milk into a large bowl.
  2. Bring potato water to a boil and pour over the ingredients. Let cool to lukewarm.
  3. If potato water is unavailable, use plain water and add 2 tablespoons of instant potato flakes to the mixture.
  4. Add beaten eggs and the yeast mixture (yeast, lukewarm water, and 2 teaspoons sugar) to the bowl.
  5. Beat in about 4 cups of flour plus the ground cardamom.
  6. Gradually beat in more flour until the dough is stiff enough to handle on the breadboard.
  7. Add raisins as desired before shaping and baking.

Tips & Substitutions

For a richer flavor, consider adding zest from an orange or lemon to the dough. If you don't have potato water, using plain water with instant potato flakes works well as a substitute. Make sure the yeast is fresh for the best rise, and if you prefer a sweeter bread, feel free to increase the sugar slightly. Adding raisins or other dried fruits can enhance the texture and taste.

Serving Suggestions

Yulekage is delightful served warm or at room temperature, making it perfect for breakfast or as an afternoon snack. Pair it with a warm cup of coffee or tea. For a festive touch, serve alongside a spread of California Fresh Fruit Dip or enjoy it with Posie Cream Frosting for a sweet treat. It also makes a lovely addition to a holiday brunch.

Storage & Reheating

After baking, let the Yulekage cool completely before wrapping it tightly in plastic wrap or aluminum foil. Store it at room temperature for up to three days. For longer storage, freeze the bread, and it can last up to three months. To reheat, wrap in foil and warm in a low oven until heated through.

Frequently Asked Questions

Can I use fresh yeast instead of dry yeast?

Yes, you can substitute fresh yeast for dry yeast. Typically, use about three times the amount of fresh yeast as dry. Dissolve the fresh yeast in lukewarm water before adding it to the mixture to ensure it activates properly.

How can I adjust the spice level in the Yulekage?

If you prefer less spice, you can reduce the amount of ground cardamom or omit it entirely. Alternatively, consider adding cinnamon or nutmeg for a different flavor profile that still captures the essence of the holiday season.

Can I add nuts to the bread?

Absolutely! Chopped nuts like walnuts or pecans can add a delightful crunch and flavor to the Yulekage. Just make sure to mix them in gently before shaping the dough to ensure even distribution.
