Ingredients

  • 6 large carrots
  • 2 Tbsp. onion, finely chopped
  • 2 Tbsp. prepared horseradish
  • 1/2 c. mayonnaise
  • salt and pepper to taste
  • 1/4 c. bread crumbs
  • 2 Tbsp. butter, melted

Instructions

  1. Cut carrots into julienne style strips.
  2. Cook carrots until tender, about 6 to 8 minutes.
  3. Drain carrots, reserving 1/4 cup of the liquid.
  4. Turn carrots into a 1 1/2-quart baking dish.
  5. In a small bowl, combine the onion, horseradish, mayonnaise, reserved liquid, salt, and pepper.
  6. Pour the mixture over the carrots, spreading evenly.
  7. Toss bread crumbs with melted butter and sprinkle over the top.
  8. Bake at 375°F for 15 minutes.
