Ingredients

  • 4 cups instant rice
  • 4 cups chicken broth
  • 2 cans chicken (each 2 cups)
  • 1 cup chopped green pepper
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 1 small jar pimento (4 oz.)
  • 1 (8 oz.) bottle creamy Italian salad dressing

Instructions

  1. Boil chicken broth in a pot.
  2. Add instant rice to the boiling broth.
  3. Remove from heat and let stand for 5 minutes.
  4. In a large bowl, combine chopped green pepper, chopped onion, chopped celery, pimento, creamy Italian salad dressing, and Zesty Italian dressing.
  5. Add the cooked rice and shredded chicken to the bowl with the vegetables and dressings.
  6. Mix well to combine all ingredients.
  7. Chill the salad overnight before serving.
