Ingredients

  • 6 chicken cutlets
  • 2 eggs
  • 1 cup flavored bread crumbs
  • 2 (10 oz.) packages frozen chopped spinach
  • 2 tablespoons olive oil
  • 16 oz. shredded Mozzarella cheese, divided
  • dash of pepper
  • 1 teaspoon chopped garlic
  • 3 tablespoons butter

Instructions

  1. Dip each chicken cutlet in beaten eggs, then coat with flavored bread crumbs; set aside.
  2. Cook or microwave the chopped spinach until heated through, then drain well.
  3. In a bowl, combine cooked spinach with 2 tablespoons of olive oil, chopped garlic, and 8 ounces of shredded Mozzarella cheese.
  4. Grease the bottom of an oblong baking dish with 1 tablespoon of melted butter.
  5. Place approximately 2 tablespoons of the spinach mixture at the thin end of each breaded chicken cutlet.
  6. Roll up the cutlets, seam side down, to enclose the filling.
  7. Drizzle the remaining melted butter over the rolled, stuffed cutlets in the dish.
  8. Bake in a preheated 350°F (175°C) oven for 30 to 40 minutes.
  9. Remove the dish from the oven.
  10. Sprinkle the remaining Mozzarella cheese over the cooked chicken rolls.
  11. Bake for an additional 5 minutes until the cheese melts and turns golden.
