Ingredients

  • 4 to 5 Italian zucchini squash
  • 2 cans stewed tomatoes
  • 1 large onion
  • 3 slices bacon
  • 1 tsp sugar
  • 1 tsp. sugar

Instructions

  1. In a wok, fry out bacon; drain and set aside.
  2. Use about 2 tablespoons of bacon grease and sauté onions until tender and translucent.
  3. Add stewed tomatoes to the onions.
  4. Add sugar to cut the acidity in the tomatoes.
  5. Add seasoning to taste.
  6. Slice zucchini into rings.
  7. Add zucchini to the tomato mixture.
  8. Cover and simmer until zucchini is tender.
  9. Crumble bacon and add right before serving.
