Ingredients

  • 2 large eggplants
  • 2 medium onions
  • 3 medium green peppers
  • 3 to 4 Tbsp bacon drippings or vegetable oil
  • 8 ripe tomatoes
  • salt and pepper
  • 8 oz Cheddar cheese
  • 1/2 to 3/4 cup bread crumbs

Instructions

  1. Carefully scoop out the eggplant from the skin, taking care not to puncture the shell, which should be less than a quarter of an inch thick.
  2. Place the eggplant pieces in salted boiling water and cook until very tender.
  3. Meanwhile, sauté diced onions and green peppers in bacon drippings or vegetable oil until soft.
  4. Add peeled and chunked tomatoes to the sautéed vegetables and cook until the mixture is well combined and heated through.
  5. Drain the cooked eggplant and mix it with the sautéed vegetables, then season with salt and pepper to taste.
  6. Stuff the eggplant shells with the vegetable mixture, then top with grated cheddar cheese.
  7. Sprinkle bread crumbs over the cheese and bake in a preheated oven at 375°F (190°C) until the cheese is melted and bubbly, and the breadcrumbs are golden.
