Ingredients

  • 8 cups peeled and seeded zucchini
  • 1 cup sugar
  • 2/3 cup lemon juice
  • 1 teaspoon cinnamon
  • 4 cups flour
  • 2 cups sugar

Instructions

  1. Mix the flour, sugar, and oleo (butter) until crumbly.
  2. Press half of the crumb mixture into a 9 x 12 inch pan to form the crust.
  3. Mix half of the remaining flour mixture with the peeled and seeded zucchini and lemon juice.
  4. Pour this zucchini mixture over the crust in the pan.
  5. Sprinkle the remaining flour mixture evenly over the zucchini layer.
  6. Sprinkle cinnamon on top.
  7. Bake at 375°F (190°C) for 30 minutes or until golden brown.
