Ingredients

  • 4 cups zucchini, sliced
  • 1 medium onion
  • 1 medium garlic clove, crushed
  • 1/4 teaspoon dill weed
  • 1/4 teaspoon thyme leaves
  • 2 tablespoons canola oil
  • 2 medium tomatoes
  • 1 teaspoon Worcestershire sauce
  • 2 tablespoons lemon peel
  • 2 teaspoons lemon juice

Instructions

  1. Shred zucchini and finely chop onion; sauté with garlic, dill weed, thyme, and oil until zucchini is tender.
  2. Remove from heat. Finely chop tomatoes and add with lemon peel and Worcestershire sauce.
  3. Combine with other ingredients.
  4. Refrigerate until chilled.
  5. Stir in lemon juice just before serving.
  6. Serve with crackers.
