Zucchini, Cheese And Corn Bread

Ingredients

  • 1 cup self-rising flour
  • 1/2 tsp cayenne pepper
  • 1 1/2 cups cornmeal
  • 2 None eggs, at room temperature
  • 1 cup milk
  • 2 medium zucchini, coarsely grated
  • 1 cup grated Cheddar cheese
  • 2 tsp sesame seeds

Instructions

  1. Preheat the oven to 375°F. Grease and line an 8 x 4 inch loaf pan with parchment paper, extending the paper over long sides for handles.
  2. Sift the flour and cayenne pepper into a large bowl. Stir in cornmeal. Whisk the eggs and milk in a medium bowl. Add to the dry ingredients and stir until just combined. Fold in the zucchini and cheese until combined. Season with salt. Spoon into the prepared pan and smooth the top. Sprinkle with the sesame seeds.
  3. Bake for 35-40 mins or until bread is golden brown and a toothpick inserted into the center comes out clean. Cool in pan 5 mins. Remove from pan; cool completely on a wire rack.
