Ingredients

  • 6 cups shredded zucchini
  • 1 1/2 cups Bisquick
  • 1/2 cup grated Cheddar cheese

  • 4 or 5 eggs, beaten
  • 1/2 cup oil
  • salt and pepper

Instructions

  2. Add diced onion, beaten eggs, and oil; season with salt and pepper, then mix well.
  3. Pour the mixture into a greased 9 x 13-inch pan or divide into 2 small casseroles.
  4. Bake for 45 minutes or until golden and cooked through.
