Ingredients

  • 3 slices bacon
  • 1 chopped onion
  • 3 1/2 cups zucchini, unpeeled and sliced thin
  • 1 can (8 oz.) tomato sauce
  • 3/4 teaspoon salt
  • 1/8 teaspoon pepper

Instructions

  1. Chop the bacon and fry it slightly in a skillet.
  2. Add chopped onion and cook until golden brown.
  3. Add sliced zucchini, tomato sauce, salt, and pepper to the skillet.
  4. Cover and cook on low heat until vegetables are tender, about 20-25 minutes.
  5. Most of the sauce will be absorbed during cooking.
